This sake is made using the "Kojonishiki" rice variety, which preserves the original flavor of the rice while also bringing out the pursuit of "elegance." Its fruity aroma is reminiscent of apples. It has a soft and full-bodied taste, leaving an elegant impression.

Up until 2016, the brewery used the "Kojonishiki" rice variety, polished to 45%, to produce their Junmai Daiginjo sake. To further enhance the brewing technique and achieve the full potential of the rice milling machine, they are now introducing the "45% Junmai Daiginjo."
