This is a Junmai Daiginjo that can express a solid flavor both as a standalone drink and when paired with meat, without being overwhelmed by the intense deliciousness of the meat.

A refreshing and dry taste, with a subtle citrus flavor underlying the taste. It has a rich and deep flavor, with a bitterness and umami taste in the aftertaste.

When paired with pork, you can fully enjoy its flavor. On the other hand, when consumed as a standalone drink, it is delightfully enjoyable.

Yamakawa Mitsuo's 19th entry, "Yamakawa Mitsuo 2021 Summer," seems to have turned into "Yamakawa Butao" (lit. Yamakawa Pig Man)? Isn't it still Yamakawa Mitsuo?

After completing his world tour, Mitsuo seems to have become interested in pairing food and sake. The theme of the Yamakawa Mitsuo 2021 project is "the encounter of meat." This year, you can enjoy the delightful collaboration of delicious food and sake.

The second entry is a collaboration with "Yamagata Kinoko Pork." The meat-loving Mitsuo visited the "Hirata Ranch" in Sakata City, Yamagata Prefecture. While the "Hirata Ranch San'yuu Pork" brand, known for its soft meat and the quality fat melting in your mouth, was famous worldwide, Mitsuo noticed the "Hirata Ranch Kinoko Pork." "Kinoko Pork" is a rare breed known as the "phantom pig," and its deliciousness made Mitsuo fall in love with it.
