Description
This "Sando Kyoko Shichinojo" is a "Shichinojo" sake that fulfills seven agricultural and brewing methods: 1. "Kikuchigawa Basin Rice," grown from the same water source of the Kikuchigawa River basin; 2. "Kimoto-zukuri," brewed with the same philosophy as in the Edo period; 3. "Pesticide-free cultivation," which preserves the relationship between the fields and living creatures; 4. "Fertilizer-free cultivation," entrusting the soil's power and time; 5. "Wooden barrel brewing," which preserves a place for bacteria and air; 6. "No added yeast," using only wild yeasts that inhabit the brewery; and 7. "Shiori," an ancient brewing method connected to the sake used in the Yamata no Orochi slaying recorded in the Kojiki. The blessings of the land unique to this region and the nuances brewed by the diversity of microorganisms, including yeasts, overlap and resonate as a complex flavor, resulting in a truly one-of-a-kind sake.
