Description

The body of this sake exudes a citrus aroma reminiscent of yuzu, accompanied by spicy notes of vanilla and nutmeg. The high acidity and freshness brought by dissolved gases intertwine with complex umami, finishing with a slight bitterness, presenting a mildly dry style. The refreshing acidity and complex umami of this sake pair excellently with herb-seasoned roasted chicken.

Since its release in December 2021, "Ubusuna" from Hananoka Sake Brewery has shown explosive popularity in the Japanese sake industry. This time, they are launching the debut of a summer limited edition. Different from the previous "Ubusuna" flavors, this sake is guided by natural lactic acid bacteria, resulting in high acidity, while the Hozumai rice imparts complex umami, and the ancient traditional technique of Kimoto creates a refreshing and rich flavor experience.

This sake released in January 2022 showcases a sparkling wine-like personality, representing the "Ubusuna" concept guided by microorganisms and fungi, thus it is named after the ancient Japanese agricultural ritual "Kawamatsuri."
