This sake showcases the sweetness and acidity brought by rice koji, with a refreshing and pure taste, yet it also carries a hint of wild complexity.

True to its name, Tsuchida 99 sake is made with rice koji from 99% of the rice grains. (Typically, the rice koji usage in sake brewing is around 20% of the total rice amount.) Starting this quarter, we have transitioned our brewing process to utilize only the natural yeast present in the sake brewery, without adding any artificial yeast. The result is this satisfying brew.
