The term "Shuppinshu" refers to a sake brewed specifically for tasting events and competitions, which are usually not available in regular markets. The annual National New Sake Awards (Zenkoku Shinshu Hinpyo Kai) is jointly organized by the National Research Institute of Brewing and the Central Association of Sake Brewers. The competition aims to contribute to the improvement of the quality of sake by investigating and researching the quality of sake nationwide, to reveal the actual situation of the quality of brewing techniques. It is made from Yamada Nishiki rice grown in Hyogo, a popular brewery rice variety, meticulously brewed with 60% of the outer layer removed, fulfilling the dreams of the brewery and brewing master.
