This extra dry Junmai new sake is known for its intense dryness, freshly pressed as raw sake!

Hailing from the famous rice-producing region of Uonuma in Japan, the brewery is renowned for its traditional handcrafted brewing and the natural purity of the water from the Kanamaki Mountains. They have produced "Takachiyo," a limited edition Japanese sake from the snowy country. This raw sake is brewed with the full amount of Miyama Nishiki rice, using the Junmai PLUS 19 method, without any added adjustments.

The Junmai PLUS 19 series is renowned for its high-quality taste with a polishing rate of 65% and an extra dry characteristic with a Sake Meter Value of +19.

The rice used is "Miyama Nishiki" from Uonuma City, Niigata Prefecture, polished to 65% using their proprietary flat polishing method. Brewing is done using the extremely soft water from the "Kanjikiyama" in Echigo Hiyama. After complete fermentation, the pure rice sake is directly bottled as raw sake without any added adjustments.

The meticulous flat polishing method takes twice as long as the conventional polishing method, carefully removing only the excess part around the shinpaku (starch center), thus retaining more of the shinpaku in the polishing process, resulting in a refreshing sake flavor.
