This "Hattannishiki Hiyaoroshi" was pressed and bottled in the harsh cold of late 2023, narrowly escaping disaster. After a summer of aging, the initially bold taste upon pressing has become rounded, reaching its optimal drinking condition and conveying the essence of autumn. Its flavor is gentle, with a well-balanced umami and acidity, providing a delicate and profound autumnal taste experience.

This is the "Hattannishiki Hiyaoroshi" sake from Sougen Sake Brewery in Suzu City, Ishikawa Prefecture, a precious creation that has escaped the impact of disaster. Sougen Sake Brewery is one of the oldest breweries in the Noto region, but during the Noto Peninsula earthquake on January 1, 2024, one of its two breweries suffered severe damage from landslides, and there was temporary power disruption. The brewing equipment could not operate, causing the brewery to halt production, and bottled sake was scattered throughout the warehouse.
