After pressing, it is swiftly bottled and stored, providing a refreshing and lively flavor with a hint of fizziness and acidity. Please fully enjoy the evolving deliciousness crafted by the toji (master brewer) Hiromi Ono.

This fifth installment of the Tsukyu series is brewed with Yamada Nishiki, known as the “king of sake rice,” and the original yeast from Iwate, “Giovanni's Melody,” creating an unfiltered pure rice daiginjo sake.

The term “Tsukyu” symbolizes the universe and sky that surrounds us. It is derived from a character in Shiwa Town and serves as the name for this new brand. As a local brewery originating from Nanbu Toji, we have challenged ourselves to use the “sour base brewing” method, which maximizes the rice's aroma, by handcrafting this ancient yet innovative production technique. Its intoxicating quality feels as if one is gently floating in the sky, bringing peace and relaxation to the spirit. While safeguarding the solid foundations of a local brewery, under the leadership of talented and powerful toji, our brewery's craftsmen flexibly respond to the demands of the times and challenge new brewing methods, giving rise to this new brand.
