Description

This Shinkame sparkling nigori sake offers a refreshing sensation and a hint of sweetness. Although labeled as “sweet,” it is not heavily sweet but rather has a gentle, refreshing sweetness in the aftertaste. The clear body creates a smooth mouthfeel with delicate sediments, and the fine, light bubbles provide a delightful refreshing experience. The rich flavors from the rice gently bloom, delivering a full and soft palate. Please indulge in the fullness and delicate flavors of this sake.

Shinkame Brewery was established in the first year of the Kaei era (1848) during the late Edo period, initially under the name “Iseya Honten.” In 1987 (Showa 62), the brewery completely transitioned to producing junmai sake, becoming the first sake brewery after the war to exclusively use pure rice. The name “Shinkame” comes from the “Tenshin Pond” behind the brewery, which is home to the “Turtle, Messenger of the Gods.” Additionally, the sake “Hikagosan” (meaning “great-grandson”) is designated for sake that has been aged for three years or more.

Shinkame Brewery has consistently upheld the belief in “pursuing quality rice,” gradually adopting organically cultivated sake rice, and through sedimentation and aging over time, enhances the richness and depth of flavor in the sake. Committed to the goal that “one liter of sake should be enjoyable to drink in one liter,” Shinkame Brewery is dedicated to providing thoughtfully crafted high-quality junmai sake.
