This sake is a clear and gentle with a bright and transparent appearance. It has a delicate and round acidity, reminiscent of a clear night on the 15th of the lunar month. The taste is like freshly sliced sashimi that melts smoothly in your mouth, and has similarities with the sharpness of the more robust mouthfeel of Okayama's Omachi or Yamadanishiki. This is a sake that is best enjoyed on special occasions with adult company.

This sake is brewed using the rare "Aiyama" rice and is produced in limited quantities. It is another version of "Fly me to the moon," using the same No. 10 yeast, but changing the rice to Aiyama. Aiyama is a rare variety with difficult cultivation and low production rates.
