Since its launch in Showa 42 (1967), this natural sake has been beloved for its “delicious and beneficial for the body” qualities. The unique four-step brewing technique developed by Niidahonke allows this sake to exhibit a distinctive charm that is hard to rival in contemporary sake. During the brewing process, the brewery analyzes twenty years of data and combines the characteristics of the rice harvested that year with traditional wisdom to carefully craft every drop. The four-step brewing technique fully releases the sweetness and umami of the rice, while the unique acidity of Kimoto brewing adds clarity to the sake's profile.
