NEXT5 is a team composed of five sake breweries in Akita Prefecture (Harukasumi, Shinshu, Yukinobijin, Yamamoto, Ichishimizu) established in 2010 with a mission to explore the potential of Japanese sake and spread its charm to the world. They have collaborated with world-renowned artists to promote the appeal of Japanese sake through cross-border partnerships around the globe.

The purpose of this project is to use the same sake rice "Kairyoshinjuku" and showcase the unique characteristics of each brewery's sake in different breweries. Environmental factors, techniques, brewing philosophies, and other factors unique to each brewery have a significant impact on the flavor of the sake, even using the same sake rice. Therefore, even when using the same sake rice, each brewery's flavor has its own unique characteristics. The goal of this project is to allow people to enjoy the unique flavors of each brewery in this way.
