Discovered in 1909, a mysterious yeast that had never been used in Japanese sake brewing was miraculously revived by the skillful hands of Ryo Kagita, the 11th-generation heir of Nakazawa Shuzo! We persist in pursuing a flavor that cannot be achieved by modern mainstream yeast. This mysterious yeast, handed down since the Meiji era, is characterized by a slightly sweet and refreshing acidity. As it is an undiluted sake with an alcohol content of 14.0-15.0%, we have preserved its deep flavor, making it a smooth and easy-to-drink sake.
