Mao Imo Shochu" uses "yellow koji," which is originally used for brewing Japanese sake. Compared to black and white koji, yellow koji has weaker resistance to bacteria, and therefore, it is considered unsuitable for mass-producing shochu in the warm Kyushu region. However, "Mao Imo Shochu" breaks the norm in the shochu industry by using yellow koji for its production.

This creates the fragrance characteristic of ginjo sake in Japanese sake, making it distinct from other shochu. This aroma makes drinking it more enjoyable and comfortable. The taste is gentle, and a slight sweetness can be felt on the palate. If served with ice, the subtle sweetness becomes more pronounced, and there is no harsh alcohol sensation.
