Description

Compared to the regular “Junmai Daiginjo Yamada Nishiki,” this sake has a richer flavor, with the taste of the rice expressed more fully. Particularly in the second act, the abundant acidity perfectly balances the intense flavor. This acidity embodies the typical style of the brewer Kuheiji, carrying hints of chestnut and providing a warm and complex mouthfeel.

In 2023, despite being one of the hottest years in Japanese history, the conditions for rice growth were exceptionally harsh. However, our rice paddies located in Kuroda Sho, Hyogo Prefecture, benefited from favorable climate conditions from their northern location, resulting in a harvest of plump, high-quality rice. We adopted a different cultivation method than the first act, ultimately completing this “Second Act.”

When freshly brewed, this sake was somewhat particular, but with the arrival of autumn, it has reached its optimal drinking time, prompting us to release it.

We have been cultivating rice in Kuroda Sho for 14 years. Initially, we had no idea which rice was good or how to cultivate it. However, by listening to the various changes on the land each year and sincerely responding to the call of nature, we personally cultivated the ingredients and worked hard to implement our practices. It is through these efforts that we have experienced the unique stories of each year and soil that can only be felt in the fields.
