Description

This sake was brewed using a low-temperature, slow fermentation method. It has a mild, banana-like aroma and a rounded, mature mouthfeel. When you drink it, you can feel the freshness of the sake's natural fermentation, as well as the gentle, refined flavor of a high-quality sake.

This year's batch has a slightly spicy taste, making it perfect for daily drinking and not likely to become boring! Despite using unpolished rice, it still shows the potential of Yamada Nishiki rice! The balance of flavors is excellent, and the price-performance ratio is outstanding!

Kihotsuru's limited edition "Calm" sake uses locally contracted Yamada Nishiki rice, as well as the same unpolished rice used for other sakes. Although it cannot be labeled as "Junmai" due to tax regulations, it is still a high-quality sake that showcases the potential of Yamada Nishiki rice.
