Description


The sake has a rich golden color, similar to champagne. It has a fermented fruit aroma with elements of matured mirin. Additionally, there are also aromas of water and koji, which make the overall fragrance complex. Because it is brewed in warm seasons, with fermentation temperature exceeding 30°C, the saccharification is vigorous, resulting in a thick and sweet flavor of rice and koji. However, due to the acidity in water and high-temperature fermentation, the finish is also refreshing. As the temperature rises, the sweetness and umami elements become stronger and the flavor becomes richer.

In 1355 during the Muromachi period, a brewing book called "Goshu no Nikki" was written. It detailed the brewing method of Bodaisen at the Shoryakuji Temple in Nara, believed to be the birthplace of Japanese sake. Mizuhana also references this book in its brewing process. Mizuhana is a rare sake that is fermented under warm conditions and is brewed in summer, which has been forgotten in modern Japan. This brewing method was replaced by winter brewing during the Edo period.

Starting from the 2022 brewing season, Mizuhana's symbolic logo will be engraved on the pottery bottle, making further changes. Enjoy this evolved 2022 brewing season.
