This restored sake is brewed according to the specifications of “Junmai Ginjo Shiborihana,” which was a standard product before 2020, using 60% polished Yamada Nishiki as the base and is carefully recreated by the current brewing team. This also represents a new attempt to rethink “Kaze no Mori’s 60% polished Yamada Nishiki.”
