This sake uses contracted Akitsubo rice grown in Nara Prefecture, with a polishing rate of 65%. Akitsubo is also referred to as "Kaze no Mori Suitable Rice." Through meticulous raw material processing and using No. 7 yeast combined with super-hard water for brewing, it undergoes careful long-term low-temperature fermentation. This has become a beloved long-selling product since the inception of the "Kaze no Mori" brand.
