This sake has been developed over several years with the goal of creating a light and gentle exquisite drink. It features a fruit aroma reminiscent of golden kiwis, and the balance between umami and acidity is nothing short of exceptional. This is an experimental sake from Iyo Kagiya in Ehime Prefecture. Its sweet, gentle, and light palate offers a new worldview that is distinctly different from previous impressions. Notably, the rice and yeast used in this sake are not disclosed, allowing drinkers to enjoy it with a pure heart, which is why it is named “Mashiro” (真白), meaning "pure white." This ultimate expression of white is a special color that can embrace everything. We hope everyone can imbue it with their own colors and enjoy the beauty of each day.
