Description

This sake is crafted with a 65% polishing rate using Gohyakumangoku rice, resulting in a full-bodied Junmai sake with a calm flavor.

A moderate aging process gives the sake a matured taste, and the slight bitterness in the aftertaste adds freshness and complexity to the overall flavor.

The subtly natural taste makes it a versatile gourmet sake suitable for pairing with various ingredients and dishes. Despite moving the brewery to the mountainous region of Yamagata Prefecture, this fisherman's sake hasn't forgotten its roots in Namie Town, seamlessly complementing fish dishes. It can be enjoyed over a broad temperature range, from chilled to warm, but it is recommended to savor its gentle sweetness at slightly warmer temperatures, making it ideal for drinking at room temperature or slightly warmed.

This "Iwakikotobuki" is the flagship Junmai sake of Suzuki Shuzoten, produced in the transition from the coastal town of Namie, Fukushima, to the inland city of Nagai in Yamagata. Due to earthquakes, the brewery was relocated to Yamagata Prefecture.

After bottling, this sake undergoes maturation in a snow chamber maintained at an ideal temperature of 3°C to 5°C throughout the year for approximately one year.
