This sake is crafted by polishing a blend of 50% Yamada Nishiki rice and 55% Gohyakumangoku rice. It exhibits a mild and stable aroma, reminiscent of banana and other fruity notes. The taste is light, clean, yet rich with the core flavors of rice and acidity characteristic of Fukushima sake. The aftertaste is flawless, providing a serene and elegant experience without being overly assertive.

While "Hiyaoroshi" is a sake that is revived from the raw state, the classic sake produced by the brewery throughout the year is Hi-irezake, and this particular one is called "Special Junmai Nama-chozo." Unlike Hiyaoroshi, it undergoes pasteurization once and matures in the brewery cellar. Typically, it is shipped in February and September each year, but depending on the season and other factors, the brewing process may vary in detail.

This sake earned the top position in the "Junmai Sake" category at the prestigious "SAKE COMPETITION 2012," the world's largest sake competition.
