Description

From Nagasaki's Mori Shuzo, Hiran Infinity β-Type continues the quest for brewing perfection. It exudes gorgeous aromas of ripe melon and white peach. The palate is smooth and full-bodied, with a gentle fizz that highlights deep rice umami and elegant sweetness. A refined acidity provides a beautifully layered, clean finish. Pairs wonderfully with yakitori and rich dishes!

The second release explores an unprecedented “unknown acidity” through the use of a high malic-acid-producing yeast. Malic acid is primarily found in fruit and is characterized by its juicy, refreshing acidity. Such a vivid expression is relatively uncommon in sake, leading Hiran to experiment with this yeast and explore what new style could emerge when malic acid combines with the sake’s existing acidity.
