In this season’s brewing, an unusual phenomenon occurred: instead of being eliminated after the yeast produced alcohol, lactic acid bacteria survived and continued fermenting in the moromi, dramatically increasing lactic acid levels. Through careful experimentation, the brewery mastered this unexpected process and reimagined it as a chance to create a new sake style. Thus, Infinity was born—a bold, innovative expression of sake’s possibilities. The bottle even carries a QR code linking to a feedback form, encouraging drinkers to share their impressions.
