This sake is brewed using the same method as the entries in the evaluation contest, aged in the same manner, and bottled without filtration. It showcases a splendid and elegant Ginjo aroma, along with a gentle and understated fragrance. The taste is crisp, not overly strong, with delicate and pleasing flavors. As the brewery adjusts based on the aging conditions during shipment, this refined and elegant sake reflects the true essence of Yamagata sake.

Gokugetsu from Shindo Sake Brewery is crafted using the pride of Yamagata, the rice suitable for brewing, "Dewa Sannsann." It is an exceptional sake made with Yamagata yeast and is considered the pinnacle of the Gasanryu series.

Gokugetsu is acclaimed as the masterpiece of the Gasanryu series, a pure rice Junmai Daiginjo that lives up to its name with noble Ginjo aromas and flavors. The brewery cultivates its own rice in its rice fields, carefully selecting and polishing the grains to a polishing rate of over 40%.
