This sake seeks a fresh and rich flavor of new sake. It has a gorgeous fragrance and a slightly higher alcohol content, which allows for a rich mouthfeel. In the past, the polishing rate was 48%, but since 2019, it has been polished another 3% to make the taste even purer. The taste and price of this sake have been carefully adjusted to make it a very satisfying product.

You must try this winter limited edition of Dassai.

"Dassai", the oldest style of new sake, cold brewing is once again lifted in this season. This sake is a restricted winter release that is made according to the orthodox production during winter pickling season. However, the current "Dassai" is equipped with a complete air conditioning system that reproduces winter temperatures throughout the year. Therefore, they provide fresh new sake all year round, but the name "cold-brewed early mash" is reserved for this product, indicating that this sake is a limited edition produced specifically for the winter season.
