Description

This sake has an elegant fragrance and an even more pronounced smooth texture, despite only having 11% alcohol, showcasing qualities of a Junmai Daiginjo. It is truly a high-quality and light sake that not only pairs well with delicious food but is also perfect for toasting or enjoying in a bar.

"Dassai 23 Junmai Daiginjo Bisui (Boxed)" has been polished to 23% and undergone a completely new change. For Asahi Shuzo Company, creating low-alcohol sake has been a challenge for over 20 years, with many attempts being halted by the high level of difficulty. Attempts to adjust by adding water did not achieve satisfactory flavor and aroma.

Finally, by carefully controlling the temperature and managing the water source during the early stages of fermentation, a sake with only 12% alcohol was produced at the very last moment. After pressing, no water was added, and the sake was bottled straight away.
