This sake exhibits a refreshing and light character, exuding a citrusy aroma. On the palate, it is refreshing and pleasant, initially offering a crisp sensation, followed by a rich, juicy, and smooth sweetness. The finish is accompanied by a delightful bitterness. As this sake is a specially brewed sake, it can showcase an exceptionally refreshing taste while presenting a crisp and pleasant sweetness.

The name "Gakki Shozou" originates from the second generation Daikichi of the Taisho era. During a visit by Prince Asaka to the local area, he developed a strong liking for the sake from the Daikichi Hon-ten store. At that time, accompanying Imperial Court Gagaku musician Oku Yoshitaka expressed, "Brewing sake and playing musical instruments are fundamentally gifts to the gods." This statement became the inspiration for the name of this sake.

Low-alcohol brewing is a highly challenging brewing technique, differentiating it from regular sake with added alcohol. "Fortepiano" is a musical term derived from Italian, meaning "strong and weak." In music, it signifies starting with a strong volume (forte) and quickly diminishing to a soft volume (piano).
