Commonly known as "Lapis Lazuli" or simply "Lapis," this sake is a classic masterpiece that embodies the cool and clean characteristics of Miyamanishiki, a representative sake rice from the Tohoku region. It uses a unique rice milling method called 'Flat Rice Polishing' for the raw rice, imparting a light and refreshing quality to the sake while showcasing the rice's distinctive features. Due to Shinsei's commitment to cultivating sake rice without pesticides, it became challenging to sustain the Miyamanishiki rice without pesticides, leading to the discontinuation of this immensely popular "Lapis Lazuli" sake.
