Description

The aroma is gentle and soft, reminiscent of ripe peaches. Upon gliding over the palate, a slight sweetness is followed by a subtle richness, and then a mild salty acidity spreads, leaving a very refreshing sensation. The overall feel is smooth, yet depth and complexity become more apparent.

At room temperature, the aroma intensifies, and with the influence of sunlight, the acidity gradually emerges. When the temperature reaches body temperature, the aroma becomes more stable, the acidity starts to highlight, and at a slightly warm temperature, an unexpectedly sweet fragrance also appears. When served hot, the alcoholic aroma gradually appears, and under the warmth, bitterness becomes more pronounced, yet overall, it presents an unexpectedly consistent profile.

At different temperatures, various layers can be tasted, providing a diverse range of pleasures. This work, "Ecru Vintage 2015," was created as a charitable sake to support the recovery from the Akita Heavy Rain Disaster.
