"Hinotori Spark 2023": Upon opening the bottle, the strong effervescence of the sake may cause it to erupt, so please be cautious. Hinotori sake, especially this variant infused with orange flavors and barrel aromas, is best enjoyed slowly. Using a small glass allows you to better appreciate the delicate flavors of the sake, while a larger glass may amplify its intensity.

"Nirankame Nama Sake (100) 2023": This sake, with a polishing rate of 100, certainly has a strong personality! The combination of smoky flavors and acidity is quite unique, which some may find challenging. Slightly chilling the sake to around 8°C may make it easier to drink, especially when the fragrance and flavor achieve a better balance. We hope you continue to enjoy this uniquely flavored sake!

This year's announcement event had the theme of experimental sake from the PRIVATE LAB.

"Hinotori Spark 2023": Initially, this "Hinotori Spark" was not included in the lineup for this presentation. However, due to a brewing failure with "Nirankame Chokai," this sake was urgently introduced. By the way, the previously shelved "Nirankame Kaika" is brewed using a purple-black rice known as "Ono no Murasaki," which also has a red appearance. Ancient rice varieties like purple-black rice differ from regular japonica rice, with their outer layers containing potent antioxidants such as anthocyanins. Therefore, the goal of "Nirankame Kaika" was to brew a new type of low-polished sake that is less susceptible to oxidation and can be stored for a long time, but ultimately it also faced failure. The extraction of pigments was less than expected, and the antioxidant components did not meet the anticipated results. Hence, the urgent substitution was this "Hinotori Spark." To be honest, "Hinotori Spark" is quite familiar to us and is no longer considered an "experimental product," though it does not fully align with the theme of this event.

"Nirankame Nama Sake (100) 2023": The low-polished series "Nirankame" from Shinsei. As everyone knows, the brewing objective of this brand is to pursue new flavors by using unpolished rice. In past presentations, we have tried polishing rates of 92%, 94%, 96%, and 99%, but this time we finally entered the challenge of brewing with brown rice. This year's raw rice was affected by climate change and exhibited the most difficult solubility characteristics we've ever seen. Choosing to brew with brown rice in such a season is, in itself, an incompatible choice. However, through our various efforts to achieve solubility, we managed to complete fermentation, albeit with some imperfections. Nevertheless, this sake is undoubtedly an important milestone for "Nirankame" and marks a new beginning.
