This sake boasts a refreshing acidity and a delightful sweetness that makes you crave for another sip! Its unique taste sensation is incomparable to other sakes! It resembles a fruity dry white wine with a refreshing citrus aroma, creating a wonderful sensation.

While traditional sakes typically use "yellow koji," this sake utilizes "white koji" commonly used in shochu production. White koji contains a large amount of citric acid, which, like Yamahai Shikomi, inhibits the growth of miscellaneous bacteria without the need for adding lactic acid, achieving a naturally additive-free fermentation process.

The name "Amaneko" comes from the fact that mixing the "yellow koji" used in sake brewing with the "white koji" used in shochu brewing results in a color similar to "linen" (cream color).
