With a matured syrupy flavor of pears and citrus, accompanied by the warmth of the climate in its aroma, this sake bursts with a refreshing lemon-like acidity upon tasting, followed by a rich stone fruit-like intensity. After drinking, it leaves a pleasant hint of bitterness in the mouth, showcasing the perfect characteristics unique to the delicious water of Koshu.

Pair it with grilled chicken skewers (salt), tempura, freshwater fish dishes like pond smelt, and cold shabu-shabu. It also complements seasonal ingredients in simple Japanese cuisine, pairing well with condiments such as yuzu pepper and Japanese pepper.

As it is bottled without filtration, sediment of lees and tartrates may occur. The recommended serving temperature is around 10°C.

Made with a limited quantity of grapes from contracted farmers, using the whole-cluster pressing method without destemming or crushing. The slow extraction of juice from whole clusters aims to suppress astringency and obtain richly aromatic juice. After fermentation, it is stored in tanks along with lees to maintain a fresh and sharp taste. In order to highlight its complexity, the final step involves the non-filtered bottling process. It can be aged slowly between summer to fall and winter to spring, allowing you to enjoy the changes in its flavor profile.
