The alcohol content in the body is exceptionally mild, providing a silky-smooth sensation with each sip, inviting one to immerse in its mysterious charm.

Compared to the usual acidity found in kimoto and yamahai sakes, this sake showcases a unique transparency, with the refreshing acidity exclusive to white koji standing out! The taste commences with delicate sweetness, followed by the expansion of crisp acidity in the mouth. As the scorching summer approaches, enjoy it chilled.

Japanese sake is produced through the fermentation activity of yeast. Yeast requires sugar as food during fermentation.

However, rice, the primary grain used, contains almost no sugar. The process of converting rice into sugar is the role of koji.

Koji comes in three types: white koji, yellow koji, and black koji. Generally, sake is brewed with yellow koji, which imparts a similar sweetness to licorice.

On the other hand, white koji contains citric acid, allowing you to experience a lemon-like acidity.
