The aroma is very gentle, with a faint hint of koji. It has a refreshing taste with a slight sweetness, presenting a rich flavor and density upon entry. Despite the high polishing rate, it clearly expresses the deliciousness of the rice. The body has a strong structure, a delicate mouthfeel, and high-quality flavors. It also carries a refreshing note reminiscent of soda and grapes. The finish is lingering, and the aging potential is highly anticipated.

Yamachu-Honke Shuzo respects the intentions and thoughts of its contract farmers, and this "Tajiri Farm" expresses that sentiment concretely. In 2000, they began a special cultivation project for Yamada Nishiki rice in the Tojo area, utilizing no herbicides or chemical fertilizers. At that time, more than ten farmers participated in this endeavor. However, due to a lack of successors and aging among the farmers, their numbers gradually decreased. By 2018, only two farmers remained. To support them as much as possible, the staff of Yamachu-Honke Shuzo stayed in the Tojo area to assist with weeding. Unfortunately, due to the lack of successors, one of the farmers is set to withdraw in 2024, leaving only the "Tajiri Farm." To ensure that the brewery can continue making sake with high-quality rice for the next hundred years, the brewery is committed to branding rice producers, aiming for the farmers to thrive alongside the sake brewery. This sake embodies that aspiration. It is both a tribute to the rice farmers and a hopeful outlook for the future.
