The nose of this sake is delicate and subtle. The flavor and freshness of green apples are still present. When poured into a glass, it has a beautiful jewel-like appearance. The aftertaste has a slight bitterness, adding flavor to the unique fruitiness.

This sake, known as "Colors Earth Jikagumi Kimoto Kiokejyouzou Junmai," is one of the most meticulously crafted works in the "Colors" series, based on the full use of pesticide-free farming. The raw material, "Rikuu 132," is a rice variety that was cultivated in Akita Prefecture during the Taisho era. It is a descendant of two of the three major varieties in Japan, "Kame no O" and "Aikoku," from the Meiji era. Therefore, it is commonly referred to as "Aigame." This rice was recommended by the famous poet and farming enthusiast Kenji Miyazawa. Due to its strong resistance to cold damage and historical evidence of suitability for pesticide-free cultivation, the brewery's farmland is mostly planted with this variety. It is one of the flagship sake rice varieties in the brewery, alongside "Kairyoshinjyu," and seems to have already begun to show its unique atmosphere. Because it is a very hard rice, its taste approaches perfection after long-term cold storage.

This sake was pressed using the "Direct Pressing" method, where the liquid was extracted directly without any contact with the air, straight from the drop to the collection vessel.

Although this method requires more time and effort, it results in a pristine taste and texture with no exposure to air.
