· 96% Polished Rice:

The tongue lightly touches the sake... surprisingly finding it exceptionally round, without angularity, with a smooth texture. Then, from that gentle texture, a rich flavor covers the entire mouth. Despite having a slight yellow color, which is characteristic of 96% polished rice, it doesn't leave a strong impression.

This bottle of sake, polished to 96%, embodies the process of "from rice to sake," with a gentle and delicious taste.

· Flax Cat Revised:

One of Newsei Sake Brewery's popular products, "Flax Cat," is widely loved for its strong acidity and a taste similar to white #7. Now, based on "Flax Cat," they have created "Flax Cat Revised," with an acidity level of 8 (even though the original Flax Cat, known for its strong acidity, has only about 4 acidity). Indeed, comparable to Shaoxing wine's acidity.

The aroma carries a slight citrus-like scent. When the sake touches the tongue, unexpectedly, there's a hint of sweetness.

However, the real highlight is here. Its acidity expands in the mouth. Hearing "high acidity" might make one clench their teeth, but in reality, the taste is very balanced, not uncomfortable at all. It's like tasting wine... this wonderful acidity brings relaxation and pleasure.

· Barrel-Aged Genroku Sake:

This sake is said to revive the brewing method of the Itami region from the early Edo period (around 1630). It's a Genroku sake brewed in barrels, with less than half the brewing water used in modern methods.

In this work by Newsei, the taste of this sake is unpredictable. The first sensation is the texture of the sake, without any sharpness. From the gentle texture, there's a slight acidity, along with extreme deliciousness. What's more unique is the transparency between the throat and nasal cavity, as if experiencing something unique again. Is this the uniqueness of barrel brewing?

The April release will be a set of three 360ml bottles. Themed around "the world of exquisite Junmai sake," the April set includes: 96% Polished Rice, Flax Cat Revised, and Barrel-Aged Genroku Sake.

While sake with less than 40% polished rice has been gaining attention in recent years, even with 23% and 1% polished rice sake becoming popular, this work is a challenge to that trend.

Indeed, low polished rice sake lacks impurities, has a refreshing taste, suitable for anyone to drink. However, the higher the polishing rate, the more difficult it is to express the uniqueness of the brewery and rice.

Newsei Sake Brewery pursues unique, personalized sake products, adhering to the policy of not participating in the polished rice competition, allowing us to experience the craftsmanship of artisans.
