This is a natural sweet sake that presents a complete aroma similar to barrel-aged sake, with notes of dried apricot, caramel, and cinnamon, leaving a lingering finish in the mouth with a viscous texture. Undeniably, it is a wonderful sake. It contains Toso-san (a blend of seven or eight spices, including sansho pepper, byakujutsu, and cinnamon), making it a celebratory sake for the New Year. Additionally, it serves as a secret seasoning for dishes like sukiyaki and grilled eel.

As a delicious sake offered to the gods, this Akazake has been cherished by the common people since the Meiji era when Natsume Soseki resided in Kumamoto. Brewed using the traditional 'haimochi' method, it possesses a sweet and fragrant taste. It can be enjoyed as Toso, a celebratory sake, or used as a secret ingredient in cooking.

The traditional brewing method called 'akumochi' was used during the Muromachi period (1336-1573) before the discovery of heating to sterilize sake. Sake was preserved by adding wood ash to the sake mash, making it slightly alkaline and preventing the growth of acid-loving bacteria and other microorganisms. This was known as Akumochi Sake, and Akazake is one of its variations.
