Despite only being aged for one summer, this sake has become remarkably mellow with a rich flavor, balanced between sweetness and spiciness, and a strong alcohol presence. It is full-bodied and has a lingering finish, making it suitable for slowly savoring the autumn nights at room temperature or chilled.

Compared to the aged Yamahai-shikomi "Akagane," the "Red Label" is a sake that is brewed quickly and undergoes mild aging, making it an excellent choice for those trying "Iwakikotobuki" for the first time.

Every autumn, the new "Iwakikotobuki Red Label Junmai Genshu Omachi Hiire Limited" is released, using locally cultivated rice in Nagai City, Yamagata Prefecture, and fermented with the brewery's original A-6 yeast strain.

The A-6 yeast strain was collected from the brewery in Namie Town, Fukushima Prefecture, which was washed away by the tsunami during the Great East Japan Earthquake. This yeast strain was cultured from the stored samples at the Fukushima Brewing Research Institute.
