It pairs beautifully with both Japanese and Western cuisine and is especially ideal as a refreshing accompaniment during the hot summer season.

This is the second sparkling sake from Yamasan Shuzo in Ueda City, Nagano Prefecture. Brewed with Yamae Nishiki rice polished to 55%, it undergoes secondary fermentation in the bottle. Compared to its predecessor, “Yamae Nishiki Junmai Daiginjo 50%,” this “Junmai Ginjo 55%” version highlights even finer, more delicate bubbles, truly representing the essence of premium sparkling sake.

“Yamae Nishiki” is a new sake rice variety developed in Nagano Prefecture as a successor to “Miyama Nishiki.” Its lineage combines the best traits of famous strains such as Hitomebore, Koshihikari, Yamada Nishiki, Miyama Nishiki, and Dewasansan, creating a versatile and high-quality rice ideal for modern sake brewing.
