Description

This sake not only carries the splendid aromas of bananas and pineapples but also a subtle touch of gentle cedar. It is truly a unique sake, where the diversity of microorganisms, including yeast, creates subtle differences that blend together to form a distinctive flavor, making it a one-of-a-kind local sake. Its balanced acidity and sweetness create a mild taste that pairs well with Japanese dishes made with fish and vegetables.

The 'Ubusuna Regulation' refers to the Nogyo 62 brewing method, which uses rice from the Kikuchi River basin. It involves pesticide-free and fertilizer-free cultivation in paddy rice nurseries, single-crop planting, trellis rice cultivation, yeast fermentation, and wooden barrel aging. In recent years, the sake rice 'Homase' has miraculously been restored. It is a local variety from the Edo period that naturally grows in their own fields and the fields along the Kikuchi River system. This sake is made using the rare sake rice 'Homase.'
