Marking the 200th anniversary of the founding of Kiyasho Shuzo Brewery, the 'Takasago' brand has been revived. To reconstruct this label, Toyoaki Onishi, the brewmaster, decided to employ an entirely new brewing method. The process involves manually blending steamed rice and koji, utilizing the natural microorganisms present in the brewery, representing the original brewing approach in the sake industry. Through experimentation and trial, the brand new 'Takasago' was born, exhibiting the unique richness and complexity found in 'Nama-zake,' along with a profound and gentle aroma. This innovative creation stands as a testament to the ingenuity of Kiyasho Shuzo Brewery.
