Description


Shinsei is crafted especially for summer, pursuing a mineral-accented acidity. To add layers of complexity, it employs a modified yamahai method and is bottled as an unpasteurized genshu to better highlight its natural effervescence. The entry is fresh with fine bubbles, releasing invigorating aromas and moderate sweetness before finishing crisp and cooling—perfect for enjoyment in the summer heat.

With its theme of being a true “sake for dining”, it complements Japanese, Western, and Chinese cuisine like a spice that elevates the meal. Thanks to the yamahai technique, the sake reveals evolving expressions depending on serving temperature and even as it develops after opening, making it a sake of discovery and delight.

Brewed by Toji Hirata Kuniyasu of Taiyo Sake Brewery in Niigata, this limited Musou brand uses locally grown Koshitanrei rice from Iwafune and Niigata ginjo yeast to showcase a new expression of Niigata’s signature tanrei karakuchi style. This fourth release in the series is the summer-limited sake Shinsei. Its subtitle “Shinsei” comes from the Zen phrase “Shinsei soku shinryo” (A quiet mind brings coolness to the body), expressing the refreshing calm one can feel even in the hottest summer days.
