This limited-edition sake from the renowned “Kaze no Mori” series, brewed in Gose City, Nara Prefecture, is crafted from locally cultivated Tsuyuhakaze rice grown in Mitsue Village’s “Firefly Village.” The rice is polished to 50% and brewed using Yucho Shuzo’s innovative pressing technique known as “Zarumidori.”

The “Zarumidori” method, inspired by ancient brewing records from the Muromachi to Edo periods, is Yucho Shuzo’s original separation technique. It involves immersing a finely woven bamboo basket within the fermenting mash, allowing the clear sake to separate naturally from the lees under almost no pressure and in an oxygen-free environment. This unique process preserves the sake’s purest and freshest flavor.
