Description

The term "Muroka" on the label signifies that this sake has not undergone charcoal filtration during the production process, resulting in a distinct flavor profile compared to regular sake. Normally, unfiltered sake tends to exhibit a yellowish hue, and filtration is carried out to achieve a clear and colorless appearance. However, the absence of filtration in this sake preserves a flavor that closely resembles its freshly brewed state. As a result, this sake boasts a rich and robust sensation, accompanied by a pronounced aromatic character, making it a unique and rare feature among Japanese sakes.

In the process of sake extraction, it is divided into three stages: "Arawari" (first press), "Nakadori" (middle press), and "Oshikiri" (last press). Firstly, bags containing moromi are gradually stacked and compressed from the top to extract the moromi. The initial liquid that comes out of the bags is called "Arawari," which has a lower alcohol content and presents a clear appearance. In the "Tsuki" stage (referring to the stage where the liquid flows out of the bags), the liquid is called "Nakadori," and the final extraction is referred to as "Oshikiri." In essence, "Nakadori" refers to the refined liquid obtained by removing the initial and final parts during the moromi extraction process.

"Namazake" refers to freshly brewed sake made by Japan's Juyondai Brewery without undergoing high-temperature pasteurization. This type of sake remains untreated by heat, preserving the natural active yeast and flavor components, resulting in a fresh Japanese sake.

The brand name "Kakushin" signifies that "Kaku" represents the techniques and passion in the brewing process, while "Shin" symbolizes taking a new step or evolution. This brand may symbolize the fusion of traditional techniques with the latest brewing methods to craft alcoholic beverages.
