The Daiginjo "Isojiman" is brewed using the specially designated A-grade sake rice "Yamada Nishiki" from Takasho Akitsu in Hyogo Prefecture. The fermentation process takes place at a low temperature in a refrigerated room, utilizing the underground water from the famous Oigawa River, sourced from the mountains of the Southern Alps. The brewery employs their well-aged in-house yeast and high-quality koji cultivated over the years, demonstrating their dedication to handcrafting this exceptional sake.
