Description
This shochu is distilled without using a tuburo still, instead employing atmospheric distillation. The result is a spirit that highlights the sweet aroma and robust flavor unique to the Satsuma Masari sweet potato, complemented by the soft mouthfeel imparted by lactic acid fermentation, enhancing the overall sense of satisfaction.

Master brewer Norihisa Yasuda, known for creating the popular shochu Yasuda, set out to recreate the shochu of the Meiji Restoration era with the project Ishin no Hitoteki. This expression, Imo Koji Imo Kan-dzukuri, goes one step further by using no rice koji whatsoever—entirely substituting with sweet potato koji. Brewed with atmospheric distillation, white koji, and Satsuma Masari, it is a 100% sweet potato-based shochu made with the traditional kimotozukuri method.
