Description


When freshly pressed, it retains a slight astringency and a firmer impression, but after maturing through one summer, the body gradually gains depth and volume. The acidity becomes rounder and softer, resulting in a fuller, more profound overall profile. As with the brewery’s other releases, the finished sake is clean and pure, with very little off-flavor, achieving a notably high level of completeness. The brewery itself describes this as a “textbook example of Yamahai.”

This Yamahai Junmai has been released since the Reiwa 3 brewing year, using 100% Hyogo Prefecture–grown Yamada Nishiki. While Chouchin Shuzo’s standard Junmai sake is typically polished to 65% or 60%, Yamahai and Kimoto styles are better suited to lower polishing ratios, so this Yamahai is brewed with a 70% polishing rate.
