Edible Hinotori—As the name suggests, this is an unprecedentedly innovative sake. Inspired by Hinotori, it fuses the concepts of food and drink, presenting a condensed umami and a rich texture that brings the experience of “a sake you can chew.” The liquid is full-bodied and dense, exuding aromas of ripe fruit and candied notes, with a long finish. It feels both like a drink and like an ingredient, delivering a richly layered taste, making it an experimental creation that challenges the boundaries of flavor.

Akanekujyaku—A rare and flamboyant expression within the Hinotori series, renowned for its vivid fruity aroma and elegant acidity. The name “Akanekujyaku” symbolizes splendor and nobility. The sake shows a balance of sweet and sour reminiscent of red fruits, with an elegant and delicate palate that also carries strength and depth. It pairs especially well with richly flavored dishes, grilled foods, or spice-infused cuisine, fully highlighting the layers of the ingredients.

In 2025, Akita’s Aramasa Shuzo unveiled this limited project at its special annual release, themed “The Ultimate Hinotori Compendium,” gathering the distinctive charm of the Hinotori series. Making their debut are two highly anticipated creations: “Edible Hinotori” and “Akanekujyaku.”

These two limited editions of May 2025 showcase Aramasa’s consistent creativity and top-tier brewing craftsmanship. Whether the highly conceptual “Edible Hinotori” or the dazzlingly gorgeous “Akanekujyaku,” both are destined to become legendary works not to be missed by collectors and enthusiasts of the Hinotori series.
